The Édition Mousson (Monsoon Edition) was born as a silky interpretation of our Crema Spécial blend. The aim: more sweetness, less bitterness, while preserving the enveloping character of a classic espresso.
Roasting approach
Medium profile, suitable for espresso and pressurized methods. The roasting curve is designed to maximize roundness and crema production, while maintaining a clean aromatic structure.
Sensory profile
A syrupy cup, marked by a dense, persistent crema. On the palate, a creamy, almost buttery texture, with notes of chocolate, peanut and sweet wood, and a balanced, low-acidity bitterness.
We therefore base this version on local coffees from India, with a Monsooned Malabar AA type Arabica as the main coffee.
This coffee is processed to recreate the experience of the first coffees exported from India to Europe, which took around six months to arrive at their destination. During transit, the coffee was modified due to humidity from the sea and salt spray.
Foreign buyers have developed a passion for the unique flavor and mellow taste of this coffee with greatly reduced acidity. “Monsooned Malabar” originated as a unique Indian variety of specialty coffee.
More softness. Less bitterness. No more crema. In the mouth, a sensation of cream, not very acidic.
